Materials:

  • Mackerel fillets (6 pieces)

  • A large onion

  • A large potato

  • 1 tablespoon of tomato paste

  • 1 tea glass of water

  • 1 lemon

  • Red and green pepper (1 each)

  • Spring onions (1-2 pieces)

  • 1 carrot

  • 1 eggplant

Mackerel stew recipe preparation:

  1. Cut the potatoes into slices and place them on the bottom of the baking tray.

  2. Arrange the mackerel on the potatoes.

  3. Cut the onions into half moons and distribute around the fish.

  4. Cut the lemons into slices and place them on the tray.

  5. Mix water and tomato paste in a separate bowl, add the spices and pour the sauce over the fish.

  6. Set the oven to 200 degrees and bake for 30 minutes.

  7. Cut the peppers, carrots, spring onions and eggplant into small pieces and fry in oil.

  8. To serve, place the fried vegetables first and then the fish on a serving plate.
